• 3 cups brown rice – cooked according to package instructions. Add more water for a more tender product.
• ½ cup frozen or fresh corn
• 1 (15oz) can black beans – drained and thoroughly rinsed
• 1 tbsp ancho chili powder
• 1 cup salsa – homemade (jarred salsa works as well)
• ½ cup stock/water
• Garnish – fresh cilantro, lime wedges, and diced avocado
INSTRUCTIONS
• Preheat a large pot or skillet over medium high heat, add corn and black beans, cook 2-3 minutes.
• Add rice and chili powder, stirring to combine, cook 2-3 minutes stirring constantly.
• Add stock and salsa, stirring to combine, cook for 2 minutes.
• Allow to sit for 2 minutes.
• Place in serving tray and top with garnishes. Serve while hot.
